Ingredients:
2 Tbsp. Butter
1 Chopped Onion
2 tsp. Minced Garlic
1 C. Uncooked White Rice
2 C. Chicken Broth
1 tsp. Salt
3/4 C. Frozen Peas & Carrots
Directions:
1. Preheat Oven to 375 F. Prepare a 1 qt. Baking dish with butter.
2. Melt the Butter in a large skillet over Medium-High Heat. Fry the minced garlic and the onion in the butter until translucent (about 3-5 minutes). Stir in the Uncooked Rice, until the rice is slightly golden. Pour in the Chicken Broth. Season with Salt. Add the frozen peas & carrots and simmer another 5 minutes. Transfer to the prepared dish.
3. Bake in the preheated oven until the broth is completely absorbed (about 30-45 minutes). Fluff with a fork to serve.
