*** I have not tried this one YET! But I keep saying I'm going to make it for the next big Holiday meal - So, if anyone gets a chance to try this out first... Let me know what you think! I found a recipe I thought sounded good (and most importantly - EASY) and then tweeked it for my liking. ***
Ingredients:
3 C. Frozen Whole Kernel Corn
3 Tbsp. Butter (NOT Margarine)
3 tsp. Sugar
1 1/2 tsp. Tony Chachere's Original Creole Seasoning
1 Medium White Onion, Finely Chopped (NOT minced)
Salt & Pepper to Taste
Pinch of Cayenne Pepper
Directions:
1. Melt the butter in a large skillet over Medium heat.
2. Add in the corn, sugar, cayenne pepper & Tony Chachere's Seasoning. Stir cooking for about 10 minutes.
3. Add the chopped onions, and continue to cook until crispy. Season with salt & pepper.
NOTE:
The recipes I found called for 4 Large Ears of Corn (Husked & Silks removed). Then you cut the corn from the cob - and follow directions above. (I prefer not to have to shuck corn, or cut fresh corn from the cob (uncooked)... so I opted for frozen corn.
