6 C. Each Zucchini & Yellow Squash, Cut into Large Chunks or Slices
2 Tbsp. Olive Oil (Plus Extra for greasing pan)

1 tsp. Italian Seasoning
1/2 tsp. Onion Powder
1 tsp. Salt
1 tsp. Ground Black Pepper
Directions:
1. Preheat Oven to 450 F.
2. Grease Baking Sheet or Roasting Pan with Olive Oil
3. Put Chopped Zucchini and Squash in a large bowl and drizzle with 2 Tbsp. Olive Oil. Mix until the zucchini and squash are evenly coated.
4. Pour the Zucchini and Squash in pan, spreading out until it evenly covers the pan. Bake 15-20 minutes, stirring once half way through until cooked through.
