Old Fashioned Potato Salad

Ingredients:

2 lbs. Red Potatoes (Unpeeled)
2 Eggs
1 C. Chopped Celery
1/2 C. Chopped Red Onion
1 HEAPING Tbsp. Pickle Relish (Dill ~OR~ Sweet, whatever your preference)
1/4 tsp. Garlic Salt
1/4 tsp. Celery Salt
Little LESS than 1 Tbsp. Mustard
Ground Black Pepper, to taste
1 C. Mayonnaise (more if desired)

Directions:

1. Wash Potatoes and Quarter. DO NOT PEEL. Bring a Large pot of salted water to a boil. Add the potatoes and cook until tender, yet still firm (about 15-20 minutes). Drain and Cool potatoes.

2. In a separate Sauce pan, boil both eggs (about 12 minutes). Drain, and add cold water and a handful of ice cubes to the pan - let the pan with cold ice water and the 2 eggs sit in the sink for about 4 minutes. Then remove the eggs, peel and chop.

3. In a Large bowl, Combine the potatoes, eggs, celery, onion, relish, garlic salt, celery salt, mustard, pepper and mayonnaise. Mix together well and refrigerate until chilled. (About 3-4 hours).
